This Valpolicella Ripasso is a blend of Corvina Veronese (45% to 95%) e Rondinella (5% to 30%) grapes. Red and non-aromatic berries cultivated in south-exposed vineyards with predominantly limestone soils in the province of Verona. In the month of January following the harvest, the wine undergoes a second light fermentation carried on the Amarone grapes residue after pressing. It is bottled using the cold sterile microfiltration technique.

Vinification and refinement

Intense ruby red color with garnet shades. Elegant aroma with scents of undergrowth. Refined, harmonious and velvety flavor.

Food paring

Excellent when served with seasoned cheese, salami, roast in general, grilled meats and wild game. Uncork the bottle half an hour before consumption, and serve at suggested temperature of about 64°F (or 18°C).
