Vinification and refinement: This wine is produced from Ciliegiolo (cee-lee-a-jo-low-aka" cherry-grape")grapes grown in the low-yielding organic vineyard of the Tenuta Santa Lucia on costal Tuscany near Pisa. The wine is produced young technique called "apassimento". a portion of the grapes are dried on the plant to concentrate their aromas  and the rich fruit flavours and then fermented in stainless steel tanks for a long period. This portion of wine is further blended with a rest of the wine that is produced from ripe Ciliegiolo grapes in order to obtain  a perfect balance between freshness and intense.

 

Wine Description: Colour: Deep ruby red in color. Bouquet: Rich spicy perfumes and black pepper notes with a hint of raisins. Taste: Full body balanced taste, very intense and spicy with a sweet cherry flavours

Food pairings: White and red meat, game fresh and aged cheeses 

Curiosity: Ciliegiolo is variety of red wine grape from Italy, named after the Italian for 'cherry'. It is a minor component of traditional blends such as Chianti but interest has revived in recent years. In Umbria region it is made into a light quaffing wine, wile in Tuscany it is made into a bigger, more structured style.
